Even restaurants involved in the food business must maintain sound and logical business practices which can promote competitive advantage. Over the decades sustainability has elevated its relevance in the business landscape. In particular, brands in the F&B business consider shared responsibility in social impacts linked to food production, food waste, malnutrition and life threatening environmental concerns. This has galvanized the need for sustainability in the food tourism. In line with this, added pressure from both the environment and today’s highly competitive market continually challenge not only extensive corporations but even small-scale business owners.

Moreover, as the demands in food industry continue to surface, stakeholders must reformulate their strategies on how to retain their business in the long run as well as making an impact to our world. This report will provide insights with the importance of sustainability in the F&B industry from the aspect of both a consumer and operator. Another aspect which will be examined in this report is how to reach the optimum point of sustainability whilst achieving over-all quality living conditions.

Sustainability and Population

Our society nowadays has evolved a lot, in terms of economic scale and various social implications. In both rich and poor nations, many present attempts to guard and preserve human progress, to meet human needs, and to recognize human ambition are naturally unsustainable. The problem with society today is that most people tend to lean toward a consumerism mindset. Most people tend to buy things they don’t really need and people often rush too quickly into fads without understanding the social impacts it might bring. In essence, the problem with today’s generation is they demand to use the environment capital from the future generation, thus promoting greed for more without having a sense of responsibility in returning it back. Based from the United Nations forecast, there is an estimated hike of the world population. By the year 2100, there will be more than 10.1 billion of people of the world as studies suggest. Progress of advances in technology with each forthcoming year has stirred human kind in a number of ways. As a direct result of this, normal human lifetime has increased including the increase of the population. In the ancient time of our nature, the birth and death percentage have always been able to counterbalance each and preserve a population hike rate that is sustainable.

In parallel to the increasing figure of populated communities all around the world, environmental sustainability have also been a major issue which affects every living creature on the planet. Ever since, mankind has strived for survival. Given the modern growth in technology we have now, the quality of life has been more conducive as compared to earlier generations. People now enjoy advances in both the medical and technological field. As linked to mankind’s survival, the need for food has been ever present in yesteryear.

Operational Efficiency

One of the famous definitions of sustainability is the “development that meets the needs of the present without compromising the ability of future generations to meet their own needs”

This approach is concerned with the pressure between the eagerness of people towards an exceptional life, however contrarily the constraint imposed by nature. (Kuhlman & Farrington, 2010, Abstract). Added to this, it also states that “sustainable development has come up as the guiding principle for global long-term development.” moreover, that it subsists of three core pillars: “economic, social development and environmental.” Sustainable business practices must be employed by major companies competing on a global scale. They must maintain the social awareness of not totally depleting our planet’s resources. Taking it from an economic standpoint, the demand is always greater than the supply. Especially in the status of today’s environment, major organizations are striving for environmental sustainability. This of course has a tremendous impact on us, as well as the future generation. This definition has been instrumental in developing a global view with respect to our planet’s future. With the invention of sustainability it stresses the long term capability of “the triple bottom line” which was first coined in 1994 by John Elkington. As Cote (2016) claimed, many stakeholders recognize the triple bottom line not only as a passing fad but a trend to follow. With the use of this concept, companies want to do more to earn the biggest possible profit and build ways that particularly benefit from both the social responsibility and the environmental scales.

The triple bottom line as define above is an efficient reference point when considering sustainability in the F&B industry as it forms a structure to describe a company’s status. Furthermore, this concept also seeks long term compatibility to obtain sustainability development. This is a significant factor which links profit generation and general sustainability. Striking the balance between three major stakeholders: planet, profit, and people ultimately bring the best possible outcomes relating to sustainability. Reducing the environmental impact of a particular business will improve its sustainability. If you are less dependent on natural resources than your competitors, you will tend to develop business efficiency.

Presented here are some recommendations in adapting a green business to reduce the impact on the environment as well as preserving natural resources:

  • Use products that reduce dependence on natural resources (e.g. rainwater tanks, solar hot water systems)
  • Usage products that are made from recycled material (e.g. office supplies made from recycled plastic, furniture made from recycled rubber)
  • Utilization business activities to see significant improvements (e.g. reducing air travel by holding conference calls instead of interstate meetings).
  • Promoting environmentally friendly methods can set a business apart from competitors and attract new customers who want to buy products and services from an environmentally friendly business.
